The Joys Of Juicing

Whats orange and sweet and purple all over? Beet and carrot juice, of course! When mixed together, the orange coloring from the carrots is completely lost in the deep purple of the beets; and the nectar-sweet flavor of the carrots almost completely obliterates the taste of the beets.

And thats a good thing, because the first time I got a mouthful of beet juice, that earthy beet taste nearly turned me purple! Yeesh! Thankfully, I discovered the merciful blessing of mixing in carrot juice, and voila! I was hooked!

Simply put: You cant beat beets! Theyre high in carbs and natural sugar, but theyre also rich in immunizing nutrients. Beets are a powerful source of vitamin C as well as the vitamin B complex, folate. They can lower blood pressure, help fight cancer, and quench the fire of inflamed joints. Some researchers claim that beet juice may increase the blood flow to the brain, boosting the level of oxygen, and thereby, inhibiting the development of dementia.

And carrots are a bountiful source of disease-fighting minerals, vitamins and fiber!

They contain the antioxidant, luteolin, which inhibits the growth of cancer cells.

The beta-carotene in carrots helps us produce vitamin A, which strengthens our vision and protects our eyes. Carrots are also loaded with vitamins C, D, E, and K along with calcium, potassium, and magnesium. Although carrots come in a variety of colors, orange carrots can help stave off cardiovascular disease.

Back in my salad days, I bought a pretty pricey vegetable juice extractor. It was very labor intensive, but so efficient at extracting the precious juice that I didnt mind the sweat equity so much. Today, I use a cheaper machine, but it gets the job done.

Your choice of a centrifugal, masticating, or triturating machine to extract your juice will depend on how much time and money youre willing to invest.
