Different types of vinegars may benefit human health, says new research published by the Institute of Food Technologists in the Journal of Food Science.
Studies show that vinegars contain antioxidants which may reduce accelerated aging, cancer and brain degenerative disorders.
Other functional therapeutic properties include:
Beneficial effects on cardiovascular health and blood pressure
Reduction in the effects of diabetes
Increased vigor after exercise
A few studies also showed that people who consumed certain types of vinegar daily may have a decreased appetite. The authors noted that further studies related to the health benefits of vinegar are needed to validate claims. Many remedies and treatments have been ascribed to vinegar and in many different cultures, according to Wikipedia, however, few have been verifiable using controlled medical trials and many that are effective to some degree have significant side-effects and carry the possibility of serious health risks.
The earliest known use of vinegar dates back more than 10,000 years ago and has been used as a food and medicine. Wikipedia cites many types of vinegar including apple, balsamic, beer, cane, coconut, date, distilled, East Asian black, fruit, honey, Jobs tears, kiwifruit, Kombucha, malt, palm, raisin, white, rice, sherry and spirit.

Vinegar was thought to be useful for treating infections in ancient times. Hippocrates (460377 BC) prescribed it for curing pleurisy, fever, ulcers, and constipation; it was used by the ancient Egyptians to kill bacteria. When combined with honey to create oxymel, it was a common cough medicine in the ancient world. Vinegar also had multiple uses in ancient Babylon where it was made from wine beginning around 5000 BC. The Babylonians used vinegar to preserve food and as a component of medicines.
The active ingredient in vinegar, acetic acid, can effectively kill mycobacteria - even highly drug-resistant strains. Acetic acid could therefore be used as an inexpensive and non-toxic disinfectant against drug-resistant tuberculosis bacteria as well as other stubborn, disinfectant-resistant mycobacteria. Diluted vinegar 3% to 5%, has also been tested as an effective screening tool for cervical cancer.

We know for certain vinegar is acidic and has no vitamins and almost no minerals or trace elements, the article stated. Sometimes you'll find sediment in the bottom, this is called Mother. Mother shows this to be an unstrained product which may have additional benefit. The addition of vinegar to your diet may help with the digestion which happens in your stomach before going to the small bowel. If food is better digested, it makes sense better health will follow. Certainly it can help diabetics control blood sugar.
