Cukes. They may look a bit like watermelons with a serious inferiority complex, but despite their size, there are huge benefits to making cucumber juice a regular part of your diet.

Cucumbers originated in India and have been a dietary staple throughout Asia for more than three millennia. Their resemblance to watermelons makes sense, because they're from the same family, which also includes squash and pumpkins.

When you're ready to make cuke juice, they actually do most of the work for you because they're 95 percent water! You wont find a better drink in hot weather than cuke juice when you need to quench your thirst and rehydrate your whole body.

Cucumbers are not only full of water; they're also full of vitamins A, B, C, and K, as well as potassium, copper, and manganese. And cukes are rich in polyphenols called lignans; and phytonutrients called cucurbitacins. Hard to pronounce and harder to remember, right?

Never mind. Just remember this: these two amazing plant-based chemicals are notoriously efficient at battling cancer - ovarian, breast, uterine, or prostate.

The cucumbers levels of the fat-soluble provitamin-A carotenoid provide invaluable protection for eyesight. Stuffed with vitamins B-1, B-5, and B-7, its levels of B-vitamins may be complex [pardon the pun], but cucumber juice provides simple and effective therapy for stress management.

Its also a tremendous source of a flavonoid called fisetin, which has anti-inflammatory properties that can inhibit the destruction of brain cells and prevent the onset of dementia or Alzheimer's. Fisetin is also an antioxidant, which recent research has revealed to be helpful in preventing bone loss. Imagine that! From your brain to your bones, the humble little cucumber has got you covered!
